Individual Caramel Apple Pies




Today's post is for a virtual wedding shower.  Becca from It's Yummilicious is getting married this coming weekend so some of us have gotten together to have a virtual wedding shower for her.  Since she is having a beautiful fall wedding I couldn't help but bring some delicious Individual Apple Caramel Pies.

I love apples and apple picking.  I have actually gone twice this year.   The place I go has tons of apples, plus pumpkins, a kids play area, animals and a great little store that sells homemade goodies, soups and more.  I took the little one with me who at her age can't really pick apples of the tree but she helped me put them in the buckets and she had tons of fun in the play area.    I could barely get her off the slide.
Since we had so much fun the first time, I went back with a friend for more apples, more slide fun and I couldn't resist picking up two more homemade soups from the store.  The bonus is the soups come with flaky homemade cheese biscuits. YUM!



I now have 20 pounds of apples I need to eat or bake with before they go bad.  I have been listening to the doctor and having my apple a day.  Along with making a big batch of apple butter (post to come soon), Apple pie was a must and these little individual ones were just perfect.




Individual Caramel Apple Pies



INGREDIENTS:
  • 3/4 cup unsalted butter, frozen shredded
  • 3/4 cup lard, frozen shredded
  • 2 tbsp granulated sugar
  • 3 cups unbleached all purpose flour
  • 1 tsp salt
  • 1 large egg, cold
  • 1 large egg yolk, cold
  • 1/4 cup cold water
  • 1 tbsp white vinegar
  • 4-5 apples
  • 1 1/2 tsp cinnamon
  • 1/2 cup brown sugar
  • 1/4 cup unbleached all purpose flour
  • 1/2 cup caramel balls
INSTRUCTIONS:
  1. In a large bowl (preferable a cold bowl) add flour, sugar and salt.
  2. Add the butter and lard to the flour, gently mixing with your hands to create a rough crumbly texture
  3. In a small measuring cup whisk together egg, yolk, water and vinegar. Add to the dough and mix until the dough comes together. Mix gently and do not over mix.
  4. Shape the dough into two discs, wrap each in plastic wrap and chill for about an hour.
  5. Peel, slice and chop the apples into small chunks and add to a large bowl.
  6. Add sugar, flour and cinnamon through a sieve and mix in with the apples.
  7. Roll out the dough and cut using circle cutter/bowl/pie cutter.
  8. Place the dough into the mini pie maker and fill with about 2 tbsp of apples and 4-5 caramel balls. (If you don't have the pie folder add the apples to one side and fold over. Crimping the edges with a fork. Repeat until you have used the dough and apples.
  9. Mix the remaining egg white with some water and brush the tops of the pies.
  10. Bake at 375F for 30-35 minutes. Crust will be golden.
